The idea for Orto Saletta – and the effort that has gone in to bringing it to fruition – arose out of the Trattoria. Our constant research into the authentic flavours of Sardinia led us towards establishing a direct relationship with the bountiful land of Alghero.
In 2015, we increased production thanks to our wonderful greenhouse, which allows the winter cultivation of aromatic herbs and small-scale plants, and during the rest of the year enables the growing of various species and their subsequent transplanting into the ground.
The authentic, seasonal produce grown in the vegetable garden is channelled into the creation of unique dishes and modern, experimental menus, which vary as the seasons change. Wild herbs such as dandelion, plantain, portulaca, chicory and nettle, alongside the fruits cultivated on our fruit trees, have made it possible for us to develop a cuisine with a strong local identity, which is truly like no other.
